Rotisserie Chicken Night
This is by far one of my favorite go-tos to have a healthy-ish dinner that is yummy and satisfying AND easy. Win- Win- Win!!
I like to get the rotisserie chicken the day of- it’s fresh and tastes better. Costco has them for $5.
Pair it with some frozen veggies. Just throw in a steaming pot or saute on the stove with olive oil and salt. You can also roast in the oven or grill. I like to get frozen because it requires no chopping. If you like to chop and have time, go for it!
Then do your baked potato as well. You can microwave this or throw in oven (takes about 45 minutes in the oven and 425 degrees). Depending on your microwave, it can take 4-8 minutes. Poke holes in the potato before!
SUMMARY
Frozen veggies + olive oil or ghee + salt steamed on stove or roasted in oven (15 minutes)
Russet Potato in microwave (4-8 minutes) or oven (45 minutes @425 degrees) + poke holes
