This is one of my FAVORITE quick and healthy meals. This recipe uses beef, but you can absolutely use chicken (or fish/shrimp!) I have a really easy shredded chicken recipe here.

MAKE YOUR TACOS IN A TORTILLA, IN A BOWL WITH RICE OR FOR A LIGHTER OPTION IN A SALAD.
If making a salad- you can put beef directly on the bed of lettuce, add tortilla chips for a crunch, avocado, green onion, tomato, etc.

Ingredients
  

Tacos

  • 1-2 lb ground beef Grass-fed is best, Organic Conventional is 2nd best
  • 1 package tortillas Maria & Ricardos Brand or any sprouted grains tortillas
  • lettuce/spring mix Organic is best
  • 2 avocados optional (topping)
  • 4 limes optional (topping)
  • cabbage optional (topping)
  • white onion optional (topping)
  • 1 package Siete Taco Seasoning or other brand that has all natural ingredients (no additives/preservatives)

Rice

  • 1 Tbsp butter grass-fed (no margarine or vegetable oil spread)
  • 1 Tbsp olive oil extra virgin
  • 4 cloves garlic get fresh and mince yourself
  • 1 cup jasmine rice organic is best
  • 2 cups chicken broth free-range organic is best

Salad

  • 1 handful spring mix darker greens and organic is best
  • desired toppings nuts, cheese, tomatoes, any veggies
  • 1-2 tbsp salad dressing Tessemae's or Primal Kitchen

Instructions
 

Tacos

  • Mix taco seasoning with beef and cook on stove until done, drain grease
  • Add meat to tortilla and desired toppings

Rice

  • Saute butter, oil, and garlic for about 4 minutes
  • add dry rice and sauté another 4 minutes
  • Pour in chicken broth
  • Cover and let cook on low for about 20 minutes

Salad

  • Toss everything together in a bowl. Add any toppings desired. You can also skip the tacos and just put the ground beef directly on your salad!
